Scientists across the world are tracking the vitamin C content in food, and St. Timothy’s eighth graders recently participated in this global study.
STS science teacher Phoebe Sanders applied for a grant through the NC Museum of Natural Science to fund a Citizen Science Project. Students tested the vitamin C content in fruits and vegetables and added their data to an international database. Scientists all over the globe use this data to study how location and time may affect the nutritional content in foods.
In addition to participating in a hands-on study, students discussed how location and socioeconomic conditions can affect nutrition in unexpected ways.
